Anyway, I found a recipe for a banana bread in a mug. Single serve, one cup sweet treat. Made right in the microwave in less than 3 minutes!
BANANA BREAD IN A MUG
4Tablespoons- Self Rising Flour
2 teaspoons -sugar
2 Tablespoons -brown sugar
Pinch.- baking soda
1 egg
1/4 teaspoon vanilla extract
1 Tablespoon vegetable oil
1 Tablespoon milk
half a ripe banana, mashed
Blend flour, sugars, salt, baking powder & baking soda.
Add egg & mix until all the dry ingredients are incorporated.
Stir in vanilla, oil & milk, then mashed banana.
Microwave 1 1/2 to 2 minutes, depending on your microwave.
I was able to get two ramekin size cakes out of this recipe for some reason. It may rise over the top of the mug as it's heating, don't worry, its goes back down a little when you take it out. Use a tooth pick to check center. If it's still runny it's not done yet. But be careful not to overcook!
It taste better cooled.
You can also add some nuts or cinnamon to the batter (optional).

ReplyDeleteOkay, I must admit I chuckled! I do love banana bread, funny growing up my mama never baked it. For some reason I don't think it was a southern thing, or it wasn't for my mama.
WE dodge bread a lot, not like the plague, but eat many meals without bread.
We who read (Sherry & I) certainly respect your will-power.
